Scrambled Tofu with Mushrooms

Ingredients:
- 20 g soy/regular margarine
- 200 g button mushrooms, sliced
- 1 clove garlic, crushed
- 2 spring onions, chopped2
- 50 g firm tofu, drained and crumbled
- 1 tsp tamari
- 4 slices soy and linseed bread (optional)
- 1 Tbsp fresh parsley, finely chopped
Directions:
- Melt ½ the margarine in large frying pan. Add mushrooms and cook over high heat for 5 mins. Add garlic and cook 5 mins, or until liquid has evaporated. Remove from pan.
- Melt remaining margarine in the pan, add spring onion and cook 30 seconds. Add tofu, tamari and mushrooms and cook, stirring gently, for 2 mins or until tofu is heated through.
- Stir in parsley and season with black pepper.
- Serve on lightly toasted bread (optional).
