Greek Salad with Lamb
Main Course
Serves 4
1 protein | 3 vegetable | 1 fat | 1 dairy protein
Ingredients:
- 500g lamb fillet
- 1 punnet cherry tomatoes
- 1/2 spanish onion, sliced
- 20 Kalamata olives, halved and pitted
- 160 g reduced fat feta, cubed
- red and green lettuce leaves
Dressing
- 1 Tbsp red wine vinegar
- 2 Tbsp balsamic vinegar
- 1/2 tsp equal
- 2 tsp olive oil
- 2 Tbsp fresh basil, shredded
- Fresh ground black pepper
Directions:
- Grill lamb and allow to cool slightly. Slice thinly.
- Place all dressing ingredients in a screw-top jar, shake to combine.
- Mix together the tomatoes, onion, olives and feta, add the lamb and dressing, and toss gently to combine. Serve immediately.
