Calamari In Fresh Tomato Sauce

Serves 3
1 protein | 2 vegetable
Ingredients:
- 600 g calamari rings
- 1 medium onion, chopped
- 1 large clove garlic, crushed
- 250 g tomatoes, peeled and diced
- 1 Tbsp lemon juice & a little lemon zest
- ¼ tsp saffron threads, crushed with a little water
- Generous handful fresh coriander and parsley, chopped
Directions:
- Soften onion in a small pan, then add garlic and stir for 2 mins.
- Add tomato, lemon juice, zest and saffron.
- Stir in calamari and pour in just enough water to cover. Simmer for 5 mins until the calamari is opaque but not rubbery.
- Stir in the herbs and serve with a green salad.
